WNCN Today director Ryan Ball and his wife have started a new holiday tradition by making popovers.
What You'll Need
A popover baking pan
2 1/2 cups of all-purpose flour
2 1/4 cups of whole milk
2 Tbsp of granulated sugar
5 large eggs
2 Tbsp of vanilla extract
2 Tbsp of melted butter (plus extra to coat inside of baking dish)
1 tsp of kosher salt
Preheat your oven to 375 degrees and place popover pans into the oven while it preheats.
Mix together all of the above ingredients except the flour. Slowly add your flour to the mixture until it's fully incorporated. It's OK to have small lumps.
Remove the hot pan and coat inside with butter or cooking spray.
Fill each cup halfway and place back in the over. Bake without opening the door for 40 minutes (opening the door may deflate popovers). Remove from the oven and serve immediately and preferably with jam.
