FirstHealth of the Carolinas: Healthy Snacks On The Go

Michelle Cole, registered dietitian, certified diabetes educator with FirstHealth Diabetes & Nutrition Education Center shares healthy summertime snacks on the go; frozen fruit kabobs, caprese salad, and roasted cinnamon chickpeas.

Energy Bites:

1 cup old fashioned oats

1/2 cup natural peanut butter

1/3 cup honey

1 cup unsweetened coconut flakes

1/2 cup ground flax seed

1/2 cup mini chocolate chips

1 tsp vanilla

Mix all ingredients together and form into one-inch balls. Refrigerate an hour before serving (can be frozen as well).

Tip from Michelle: I usually double the recipe as these get gone fast! Hope you enjoy!
