Chef Adam Rose from The Black House at Straw Valley makes Spaghetti with Arugula.
Olive oil 3 T
White wine 2 oz.
Red pepper flare 2 t
Sicilian oregano 2 t
Spaghetti 1/3 lb.
Parmigiana as needed to taste and garnish Arugula 1 large hand full Salt as neede d to taste in the pasta and the water Pepper to taste
Drop the pasta in boiling salted water.
Over a medium high heat add the oil to the sauté pan. Than add the garlic, oregano and red pepper flake. Cook until you smell the garlic than add the white wine. Allow the wine to reduce almost all the way. Remove from heat. When pasta is cooked aldente remove from water. Return pan to heat and add the pasta, the arugula and a little pasta water. While stirring the pasta around the pan cook the water out, Season with Parmigian salt place it on a plate or bowl and garngarnishh more Parmigiana.
