Food Lion Kitchen: Chicken Provencale

Rotisserie Chicken a la Provencale
Yield 4

o Food Lion Deli Rotisserie Chicken 2 Tbsp Onion Minced
o 4 Food Lion Tomatoes peeled and drained and crushed
o ½ cup White Wine
o 1 clove Garlic crushed
o ¼ cup Thickened Beef Stock
o 20 Olives pitted and blanched
o 8 Food Lion Small Mushrooms  sautéed in butter
o 8 Anchovy fillets (optional)
o Salt & Pepper to taste

Sauté onion
Add the tomatoes and the garlic
Season with salt and pepper and add the wine
Add the beef stock and simmer
Reduce to half
Garnish with olives, mushrooms, and anchovy
Finish with chopped parsley.
